Sesame Steak Salad with Asian Pears
Serves 4
1 lb boneless beef strip steak , cut into thin strips across grain 3 T. fresh lemon or lime juice
1 medium Asian Pear 2 1/2 T. soy sauce
2 scallions, white parts minced, green sliced on diagonal 2 T. Ginger Sauce, sweet
1 clove garlic, minced 1 tsp. Asian sesame oil
Salt and black pepper 2 T. rice wine vinegar
2 T. fish sauce 1 good sized head of romaine lettuce, torn into bite-sized pieces
1/2 med. seedless cucumber, thinly sliced 1 T. vegetable oil
1 tsp. or less spicy Asian Chili sauce
Prepare marinade for beef:
Combine minced whites of scallions, garlic, ginger, 1/2 tsp. sesame oil, 2 T. lemon juice, 2 T. soy sauce, few grinds of black pepper, pinch of salt.
Add beef strips and toss. (Can use leftover rare steak.)
Next, in small bowl, whisk rice vinegar, Chili sauces and fish sauce with remaining lemon juice, soy sauce, 1/2 tsp sesame oil to make dressing.
Toss lettuce with 3 T. of above dressing. Divide among plates and add thinly sliced Asian pear and cucumbers to bowl of dressing and then scatter over lettuce.
Pat beef dry and add to oil warmed in med. skillet over med. high heat.Cook until beef is barely cooked through (or warmed if using leftover steak), but nicely browned.
Top salads with beef and any accumulated juices. Garnish with remaining green scallions.
